Castle Hot Springs

Serves-6

• 3 heads baby romaine- cut in half

Toppings

• 2 cups winter squash- peeled, small diced and roasted
• 1 apple- small diced
• ½ cup pomegranate seeds
• ¼ cup roasted pecans 
• ½ cup blue cheese
• Creamy Maple Dressing
• 1/4 cup mayonnaise 
• 1/4 cup extra virgin olive oil
• 1/4 cup maple syrup
• 1 tbsp whole graine mustard
• 1 tbsp apple cider vinegar
• 1 tsp sea salt
• 1/4 tsp fresh black pepper

Place lettuce on plate and place toppings on lettuce

Combine all ingredients for dressing in a small jar and shake until combined. Drizzle with maple dressing over salad and serve.
