The 1-Acre farm is home to some of the most vibrant flavors to ever hit your palate. Things like Sonoran Passion Fruit, Mokum Carrots and Lucid Tiger Tomatoes (a Castle Hot Springs, hybrid-tomato exclusive) are all grown with for your meals at Harvest and drinks at Bar 1896. The team utilizes one of the most unique growing climates in the world to cultivate crops from seed to plate.
Spring water as the main resource for growing is especially rare and infuses the crops with minerality and flavor that elevates each dish they touch. And elevating dishes is what they’re here to do. One of our farmers, Maddy, says, “We are working with some talented palates, so we really consider what Chef and the bar are after for their craft. As farmers we really enjoy finding rare varieties, so between our departments, we discover new flavor combinations everyday”. That’s good news for you.
