Ingredients
2# Fingerling Potatoes
1 ea Rosemary Sprig
3 ea Thyme Sprig
1 ea Bay Leaf
1 Tbsp. Sea Salt
1 C Oaxaca Cheese, diced
¼ # Butter, diced
¼ tsp. Black Pepper, ground
Process:
Bring a large pot half-full of water to a boil. Add rosemary, thyme, bay leaf, and sea salt. Add potatoes and boil for 25 minutes until fork tender. Strain and cool in fridge. Preheat oven to 375 degrees. Once potatoes are cooled, smash and line a cast-iron pan. Sprinkle the cheese and butter in the pan with the potatoes, sprinkle salt and pepper, wrap with foil and cook in oven until cheese is melted, approximately 20 minutes. Uncover and bake for 5 additional minutes to brown the top. Serve hot.
